1      tablespoon olive oil
1      tablespoon garlic, minced
1/4   cup scallion, sliced
4      medium russet potatoes, peeled, boiled, and mashed
1      cup nonfat plain yogurt
1/4   cup milk
salt
pepper
freshly ground nutmeg

 

*In a small skillet heat the oil and sauté the garlic for 1 minute.

*Add the scallions and cook until the garlic is fragrant but not browned.

*In a large bowl whip the potatoes with the yogurt and milk.

*Add the spices and garlic mixture. Top with additional nutmeg before serving.
