Perfect for those Thanksgiving Leftovers!!

 

1 Tbsp. Canola oil

1 medium onion, chopped

1 clove garlic, minced

1 1/4 pounds turkey breast, cut in 1/2 inch pieces

2 cups cooked wild rice

1 can (15 ounces) Great Northern white beans, drained

1 can (11 ounces) white corn (optional)

2 cans (4 ounces) diced green chilies

1 can (14 1/2 ounces) low sodium chicken broth

1 tsp. ground cumin

Hot pepper sauce (optional)

4 ounces low-fat Monterey Jack Cheese, shredded

Parsley  (optional)

 

 *Heat oil in large skillet over medium heat; add onion and garlic.  Cook and stir until onion is tender.

*Add turkey, wild rice, beans, corn, chilies, broth and cumin.

*Cover and simmer over low heat 30 minutes or until turkey is tender.

*Stir in hot pepper sauce to taste.

*Serve with shredded cheese.  Garnish with parsley, if desired.
